Tondeluna Lunita Cheese
Cured goat cheese made in the village of Tondeluna, Ojacastro (La Rioja), next to Ezcaray.
Minimum 2 months of curing.
Made with goat's milk from our own herd , fed and cared for in the mountains of Ezcaray (Sierra de la Demanda).
Ingredients : Raw goat's milk, ferments, calcium chloride, salt and rennet.
- Consumption: It is advisable to let it cool before consumption for at least half an hour, so that it develops its aromas.
- Storage: It is advisable to store it in a cool place, at temperatures not exceeding 16ºC, wrapped in film or waxed paper.
- Food pairing: Ideal with tomato jam, red pepper jam, or even rose petal jam for those with a sweet tooth.
- Drink pairing: This goat cheese goes perfectly with Rioja white wines.
Our semi-cured goat cheese moon acquires its creamy texture and characteristic flavor, as you yourselves call it, of “goat cheese and boletus” thanks to the proliferation of natural molds and its slow, controlled maturation in the cellar.
