Aging : Between 4 and 7 months. During the final period, the cheese is bathed in olive oil and Amontillado wine to enhance its incredible flavor and aroma.
Intensity: Intermediate due to its special curing process and the fact that it is covered with balsamic cream flavored with Amontillado wine.
Rind: natural, covered with oil and Amontillado wine.
Characteristics: White cheese with an intense flavor and a firm texture. Covered in a balsamic cream flavored with Amontillado wine.

Amontillado is a natural fortified wine from the province of Cádiz, somewhere between Fino and Oloroso. Made from Palomino grapes, a double fermentation process makes Amontillados an extraordinarily complex and interesting wine. This cheese is aged in a balsamic cream flavored with Amontillado wine, resulting from the combined texture of grape must caramel, Amontillado wine aroma, and xanthan gum.
