Tres Leches Cheese - Castrocastillo
Our Tres Leches cheese, also known as Castrocastillo, is made with raw sheep, cow, and goat milk in varying percentages depending on the cheese and the time of year. A perfect combination for each season, depending on the grass and forage.
Matured in a cave 10 meters underground.
- Milk : RAW and whole milk from sheep, goat, and cow. Origin: León, Spain.
- Maturation : Cheese with a minimum maturation of 2-3 months.

- Bark : Edible natural bark. Can be removed.
- Storage : Keep refrigerated between 2º and 4º. Once opened, wrap in cling film.
- Shipping format : Whole cheese wrapped in food film or paper.
- Recommendation : Allow to cool for at least 30 minutes before serving.

- Cheese with a wild character and earthy, fungal notes and a particular moisture.
- Tasting notes : Elegant yet robust on the palate. The sweetness of sheep and cow's milk predominates, with a certain spicy finish from the goat's milk. Low in acidity, it recalls notes of mushrooms and candied onions, with an aftertaste of nuts and wildflowers.
- Pairing : It goes especially well with aromatic white wines with good acidity, such as a local Godello or a dark, top-fermented beer.
