Barraqueño Cheese
Barraqueño cheese is made with raw milk from goats from their own herd , cared for and fed 50 meters from the dairy in the El Barraco area of Ávila. It's a soft, smooth cheese with a natural, moldy rind coated with charcoal, which is edible, of course. It has a very creamy texture in the mouth, similar to a cheese mousse .

- Maturation : Soft cheese with a maturation period of 20 to 25 days.

Curiosities about Barraqueño cheese
A creamy, almost spongy cheese with subtle notes of goat cheese, raw almonds, and butter on the palate. It has a melting texture, is very fresh, and has a refreshing acidity aftertaste.
Edible natural bark, covered with ash or charcoal, which gives it a very special flavor and texture.
