Alto Cidakos Sheep Cheese

Our Alto Cidakos Sheep Cheese is one of the most authentic sheep cheeses from La Rioja. Made with raw milk from sheep cared for and fed in the Los Cameros region of La Rioja, our own flock. Matured in a natural limestone cave in Arnedillo . Extremely limited production.

Very special pressing with cotton cloth, same style as Mahón Menorca cheese.

  • Milk : RAW sheep milk. Own livestock.
  • Maturation : Cured cheese aged for a minimum of 3 months. Matured in a cave.
  • Origin : La Rioja (Spain)
  • Intensity : Very Soft | Soft | Medium | High | Very High
  • Rind : Edible natural rind. It's highly recommended to eat it with the rind, as it blends with the pasta and adds flavor and texture.
  • Storage : Keep refrigerated between 4º and 8º. Once opened, wrap in baking paper.
  • Shipping format : Vacuum-packed cheese wedge.
