Box of Iberian Acorn-fed Shoulder :
Box of Iberian Bellota shoulder containing between 14 and 16 sliced envelopes of 50% Iberian Bellota shoulder, each weighing approximately 120 g.
The approximate weight of the box is +/-1,800 kgs.
Origin of Iberian acorn-fed ham:
Iberian Bellota hams come from pigs raised free-range in open pastures with holm oaks, fed on acorns during the montanera season. The acorns define their authentic and genuine flavor, also thanks to their ideal curing process. Red label.
The Montanera period is the period between October and March during which the acorns ripen. This is also the final phase of raising an Iberian pig. The animal gains weight quickly during this time, and is then slaughtered.
What does the red label on hams mean?
The red label means that the product we are buying comes from a pig that is 75% or 50% Iberian breed and that has been fed on acorns from the pasture (depending on the percentage mentioned). You can also see the meaning of the other labels on our blog: Regulations, ties and ham labels.
