This semi-cured soft cheese is made with raw milk from Campo Capela cows. It stands out for the remarkable ripening of its natural, hard, compact, and completely edible rind. This rind is infused with a blend of coffee and cinnamon, giving it a unique personality without compromising the characteristics of its interior, which maintains its softness and delicate flavor with hints of yogurt and cream. For pieces weighing 400 g (approx.), the ripening period is 20 days.
This cheese was awarded the Innovation Prize at the 2017 A Coruña Gastronomic Forum. Furthermore, in 2018, it was honored with a gold medal at the World Cheese Awards, held in Norway. In November 2021, it received another prestigious recognition, winning the Silver Medal at the 2021 World Cheese Awards, held in Oviedo.
