Néboa Cheese
Néboa cheese is a ripened, soft cheese made from raw Galician cow's milk, with a white rind refined with Penicilium candidum. It is characterized by its forest, mushroom, and creamy notes. Perfect for starting any cheese board.

- Maturation : Soft cheese with a maturation period of 30 days.

- Bark : Natural, edible bark. Recommended to eat with the bark.
- Storage : Keep refrigerated between 2º and 4º. Once opened, wrap in cling film or baking paper.

Curiosities about Néboa cheese
Completely manual production
It begins with pre-maturation of the milk, followed by the addition of rennet and molding, with frequent turnings until the pH required for a balanced flavor and acidity is achieved. It then moves to the aeration chamber, where it will remain until the penicillium appears.
Finally, Néboa undergoes a maturation process in our cellar, which features a stone wall through which water naturally filters, achieving the optimal humidity level for maturation. It will be turned daily for approximately a month.
