Designation of Origin Manchego Cheese
Manchego cheese is the cheese produced in the natural region of La Mancha from the milk of Manchega sheep , aged for a minimum of sixty days. Artisan Manchego cheese is made with raw sheep's milk from farms registered with the Designation of Origin.
Manchego cheese is the product of a harsh and extreme climate , which favors the growth of very hardy vegetation, nourishing a rare and ancient breed of sheep that is subjected to strict morphological and health controls. These characteristics result in a cheese that is unique in the world .
