Agarimo Cheese
Agarimo cheese is a soft, matured cheese made from pasteurized Galician cow's milk , with a washed rind.
Matured for a minimum of 30 days. Its texture is elastic, grainy, and melting. Its natural rind has a fruity flavor and a very elegant aftertaste.
Ingredients : Pasteurized cow's milk, lactic ferments, rennet and salt.
Elaboration
It begins with a one-hour pre-maturation of the pasteurized milk, followed by the addition of rennet and finally the molding process. The maturation process then begins in an airing chamber, with turning at intervals and washing the rind until an optimal acidity balance is achieved.
Finally, the Agarimo cheese undergoes a maturing process in the cellar. This cellar features a stone wall through which water naturally filters, achieving the optimal humidity level for maturing. It is turned daily for approximately 30 days, at which point the product is ready for sale.
Bark : edible, pale yellow.
Pasta : soft, granular and elastic, uniform ivory white color.
Flavor and aroma : lactic and fruity flavor and aroma.
