Sautéed vegetables with ham
- Let's prepare the vegetables by cleaning them thoroughly. We cut the strings off the green beans and trim the ends of the wild asparagus. Each variety of vegetable requires a different preparation, but the key is that everything is cut into more or less even pieces.
- Once sliced , steam it for 5-6 minutes in the microwave , using a steamer or in a sealed container with a finger of salted water at the bottom. It should be al dente.
- In a wok or non-stick frying pan, sauté the onion with the chopped spring garlic .
- When it begins to turn transparent , add the vegetables, draining any liquid they may have released, place over high heat, and sauté, stirring constantly, until the vegetables reach the desired tenderness. The important thing is to keep them tender but still intact.
- We then add the ham and stir it just once to integrate it with the vegetables.
- Season the stir-fried vegetables with salt and pepper or add soy sauce and serve hot, freshly made.
