Picón Bejes-Tresviso PDO Cheese

Our Picón Bejes-Tresviso DOP cheese is a natural cheese , one of Spain's most notable blue cheeses. It has an intense, penetrating aroma. Notes of cava, animal origin, and mold (penicilium). It has a semi-soft, creamy texture and an intense flavor.

Javier Campo , master cheesemaker, makes this magnificent blue cheese with milk from his brown-alpine cows, which are fed and cared for in pastures, where they graze freely on the sloping meadows of the small town of Tresviso.

Award: Best Blue Cheese 2019 by AFCA (Friesian Association of Cantabria), Gold Medal 2022 World Cheese Awards.

Once the cheese is made, it is transferred to natural caves in the mountains for maturation for two to four months. In these caves, the relative humidity is 90% and the temperature ranges between 8°C and 12°C.

These conditions favor the development of penicillium -type molds in the cheese during ripening, giving it its blue-green areas and veins. The flavor is slightly spicy, more pronounced when made with pure goat and sheep milk or a blend.

Ingredients : Raw cow's milk, rennet, salt, penicillium and lactic ferments.
