Cabrales Cheese DOP

Our Cabrales DOP cheese is a natural cheese , handcrafted by the farmers themselves, using raw cow, goat, and sheep milk . One of the few cheeses that uses milk from all livestock.

Once the cheese is made, it is transferred to natural caves in the mountains for maturation for two to four months. In these caves, the relative humidity is 90% and the temperature ranges between 8°C and 12°C.

  • Milk : RAW cow, goat, and sheep milk. Own farm.
  • Maturation : Cured cheese with a minimum maturation of 3 months.
  • Origin : Cabrales, Asturias (Spain)
  • Intensity : Very Soft | Soft | Medium | High | Very High
  • Bark : Edible natural bark. It has no bark at all; the whole bark is eaten.
  • Storage : Keep refrigerated between 2º and 4ºC. Once opened, wrap in film or baking paper.
  • Shipping format : Vacuum-packed cheese wedge.
