Finca Pascualete Pastura Truffle Cheese is a soft cheese made from pasteurized sheep's milk , with a rind infused with Penicilium candidum and black truffle from Italy . Its production is inspired by the traditional recipe from Tuscany, Italy, which was brought to Extremadura by transhumant shepherds. We've added the exquisite black truffle, also from Italy, which makes Pastura an even more delicious cheese.
Its white, tender, moldy rind holds a delicate, creamy yet compact paste, dotted with bits of truffle. Its flavors are distinct and harmonious, resulting in a cheese with a unique, rounded taste. The palate contrasts the sweet flavors of the dough, the earthy aroma of the rind, and the delicate taste of the truffle.

This soft cheese made from pasteurized sheep's milk has a rind molded with Penicilium candidum and black truffle from Italy. It's a balanced cheese, with a soft texture, the intensity provided by the truffle, and the lacy edible rind. A perfect balance between three predominant flavors: soft texture with hints of milk, the power of the black truffle, and the sweet taste of the white mold. It has a moldy white exterior, a uniform, bone-like interior with black hints, and no eyes. Its aroma is mild, with the truffle and mold predominating on the surface. Finally, it has a tender texture.

Finca Pascualete is a family business whose origins date back to the early 13th century. After helping in the conquest of Trujillo, in 1232 Don Fernán Ruiz Altamirano was gifted the vast lands that now house Finca Pascualete, in the heart of one of Europe's richest and best-preserved ecosystems: the Extremaduran dehesa.

In order to control the quality of the product in all processes, Finca Pascualete has its own flock of Extremaduran Merino sheep , a breed that has found in this idyllic landscape of southwestern Spain the perfect environment for its proper development, far from the stress and subjugation of the stable.

The knowledge passed down from generation to generation of shepherds who have lived on the farm makes us custodians of ancestral knowledge, both of shepherding and of caring for the land. Thus, for the same centuries, we have been making cheeses in our huts in a completely homemade and artisanal way.
